Description
Domaine Jones Fitou
Nickname: The Wild Heart
Enjoy it when:
For hearty cooking, loud laughter and long evenings that stretch without apology.
Bottle Tale:
High in the rugged hills of Fitou, the vines cling to dry, windswept slopes overlooking the Mediterranean. This is old-vine territory — Carignan, Grenache and Syrah with gnarled trunks and deep roots, producing tiny grapes full of intensity and sun-soaked flavour.
The energy behind it all is Katie Jones, a determined Brit who fell head-over-heels for this corner of Southern France and built her winery vine by vine. Her Fitou is everything the region should be: black cherry, herbal earthiness, cracked pepper and a savoury depth that comes from old vines and wild terroir. Rustic in spirit, polished in the glass — passionate winemaking you can taste.
Let it linger:
A short decant works wonders. Pour it with braised meats, grilled lamb, cassoulet, smoky aubergine or anything that loves a little South-of-France swagger. The ideal bottle for friends who stay too late and stories that get better after midnight.
