Ripasso is Valpolicella with its evening jacket on — fermented a second time over Amarone’s dried grape skins to gain depth and silkier texture. Allegrini famously pioneered and perfected the technique, crafting a style that’s plush but not heavy: black cherry, dried herbs, a little cocoa and a savoury finish shaped by hillside fruit.
Grapes come from the sunny slopes of Fumane and Sant’Ambrogio, where cool breezes from Monte Baldo keep freshness alive. It’s this balance — richness wrapped around vibrant acidity — that makes Allegrini’s Ripasso one of Italy’s most quietly luxurious reds.
